Kiwi Coconut Ice Cream

Most of the winter fruits are loaded with C-Vitamin and other antioxidants, but one fruit outshines most of them in the nutrition department – the kiwi fruit.
Just one kiwi and you have consumed the recommended daily dose of C-Vitamin.

The more C-Vitamin the body has the better it can prevent or fight the common cold and the flu.

If you are looking for a healthy, fruity and refreshing Christmas dinner dessert, this is a very good and a very simple one.
You are going to love this kiwi ice cream!

All you need is 6 kiwis, couple of pitted dates, coconut cream (75%) and 50 ml of almond milk. You can use 1 date per kiwi or less depending on how sweet you like things.
If you use medjool dates use less of them like for example 4, because they are bigger.
Just a quarter of a teaspoon of matcha will give this ice cream a big boost of antioxidants.

Peel the kiwis and cut them into pieces. Cut the dates into small pieces too. Throw the kiwis and the dates into the food processor and add the almond milk. Blend until everything is nice and smooth (there should not be big pieces of dates left). Then add the coconut cream and the matcha and pulse a few times until combined nicely. Pour the liquid in a container and put into the freezer for minimum 6 hours.

If the ice cream is totaly frozen, wait until it defrosts (30′-40′) so you can make scoops.

Serve with roasted salted pistachios.

Ingredients

Makes for 3 portions (6 scoops)

  • 6 kiwis
  • 165 ml coconut cream (75% coconut). I like the brand Blue Elephant
  • 50 ml almond milk
  • 5-6 pitted dates or 4 medjool dates
  • 1/4 tsp matcha

Topping:

  • roasted salted pistachios (~ 50 g)
