I am guessing you either love or hate this dark leafy nutrient dense vegetable. Yes, our parents meant well when they tried to make us eat one of the healthiest foods on earth.
I like Spinach only if it is cooked to my taste, creamed and nicely salted. But then one day Spinach met Saffron in my kitchen and since then I am Spinach crazy!
All you need is your favorite creamed spinach, your favorite vegetable stock for flavor and a little bit saffron.
Throw in the vegetable stock, cook it for about 10′ and at the end of the cooking spice it with saffron and add salt if needed.
Ah, behold the Saffron spice, not only that it’s packed with healthy nutrients, but its scent may have anti-depressant effects. So next time you use it for cooking, try not just tossing it into the pot, but take time to smell it, take deep breaths, it is amazing. You could also do this when you feel stressed and see if it helps.
Makes 1-2 portions of creamed spinach.
- 150g of frozen not salted creamed spinach (you could also cook your favorite creamed spinach recipe)
- 1/4 tsp vegetable stock
- a pinch of saffron (around 60 mg)
- salt at the end if needed
This can be served as a side dish, but I also love it as a starter insted of a soup.
